Sussex low fat fruit Cake

This cake (loaf) is suitable for those on a low fat diet, (225 Kcal/1.1g fat) as it's fat free, but still keeps well.

Makes 2lb loaf.

Start by preparing a 2lb/1kg loaf tin, line with silicone paper. Set oven to setting 180°, or gas 4.
Sift flour and all dry ingredients in bowl
Place orange juice in cup, top up with more juice or squash.
Add all liquids, then add fruits.
Stir well, place in the prepared loaf tin. If required, sprinkle tablespoon of grated coconut on top. cook for 60 minutes.
Check with skewer after the 60 minutes. If ok, turn out after ten minutes onto wire rack, allow to cool.
Store in airtight tin for 24 hours before using.
